the wonderful" gorgonzola "I think I have Sardinian already discussed (here) . As I said, it is not, in fact, gorgonzola, blue cheese but with the distinction of being made only from sheep's milk. For me it is really good, and not because it is definitely not diet, I fear that abuse ... However I always try new ways to use it yesterday and I put it together with vegetables in a makeshift version of the new gratin that I was very satisfied not only for its taste but also for the beautiful effect of color.
fresh carrots and boiled rather large
red onions
potatoes
blue cheese
fresh mozzarella (buffalo also, being able to)
butter
divine white vinegar
Peel the carrots and onions and peel potatoes. Cut all large enough to touch (the carrots and potato-shaped stick) and partially cook each vegetable separately in a saucepan (or in that, in turn) in water acidulated with a little white vinegar. Do not add salt because the cheese is enough to give all the flavor needed.
In frattempo foderare una pirofila con carta da forno; sminuzzare il formaggio e farlo sciogliere su fuoco dolcissimo con una piccola noce di burro.
Scolare le verdure al dente, disporle nella pirofila, irrorarle con il formaggio fuso e inserire in forno già caldo sotto il grill.
Ridurre a dadini la mozzarella e, dopo alcuni minuti, disporla sulle verdure che andranno di nuovo in forno, ma, questa volta, non sotto il grill, ma in posizione centrale per circa 5 minuti.
Servire caldissimo e… filante.
